Quick and Easy Cereal Bars

I LOVE these cereal bars. I found them on my friend Courtney's blog last year. They are really easy to put together and really tasty! They're also great to have for a relatively nutritious after school treat. Beware though, they are addicting!




1 bag mini marshmallows
1/4 cup butter
1/2 cup peanut butter
4 cups cheerios
3 cups rice krispies (or omit rice krispies and and add 2 more cups of cheerios)
1 cup m&m's (best if frozen when added)


In a saucepan or microwaveble bowl, bring the marshmallows and butter to a boil. Add peanut butter, stir well, and heat for one more minute. Add the cereal to the melted mixture and stir well. Add m&m's and stir gently. (If they are not frozen, they will begin to melt quickly!) Press into greased 9X13 pan. Let it cool and serve (we cooled ours in the fridge so we could serve it quickly to the kids.)

No Bake Cookies - to the Next Level!

Hello! I wanted to share this yummy no-bake cookie recipe I found on See Jane in the Kitchen Blog. Are ya ready? They are no-bake Rocky Road Cookies. I took them to my cousin's house last night for dessert. They were well liked:)


Bring to boil in a saucepan for 1 minute:

2 cups sugar
1 stick butter
4 Tbsp cocoa
1 cup milk

Then add in:
1 cup peanut butter
1 tsp vanilla

Mix well and stir in:
3 cups oatmeal
2 1/2 cups mini marshmallows
1 cup chopped peanuts
1 cup chocolate chips (I used semi-sweet)

Scoop with a cookie scoop (I used a medium scoop) onto waxed paper until cooled.

My 5-yr old, who does not like peanut butter, loved these. They are REALLY good!

Lemon Pie

This is not your typical lemon meringue pie! I, for one, am not a fan of meringue but I do love the lemon part. I adapted this recipe from a quick key lime pie from The Pioneer Woman (great site by the way). It's super easy and delicious!

Lemon Pie

Preheat oven to 350 degrees.

1 tsp lemon extract
1/2 cup lemon juice
2 egg yolks
1 - 14-ounce can sweetened condensed milk

Mix lemon extract, lemon juice, and egg yolks in a mixing bowl. Add in condensed milk and mix on high until smooth and thick. Pour mixture into crust and bake for 15 minutes.

Remove from oven, allow to cool, then refrigerate for at least 1 hour—more if possible.

Spread whipped cream over top and serve!

This is the pie before the whipped cream.



This is the pie after the whipped cream. It would have been prettier had I garnished it with a slice of lemon or something. Next time.


It's delicious! There's only 2 pieces left (we shared some with my parents.)
