Breakfast Pies!
Adapted from Allrecipes
3/4 pound bulk sausage (I used hot italian sausage)
1/8 cup chopped onion
1/8 cup chopped green bell pepper
1 (12 ounce) can refrigerated biscuit dough (NOT Grands)
3 eggs, beaten
3 tablespoons milk
1/3 cup sharp cheddar cheese
Preheat oven to 400 degrees. Brown meat and veggies in a skillet until browned and the meat is fully cooked. Separate the biscuits and press into bottom and up the sides of each muffin cup. Fill each dough cup with sausage mixture. Mix together eggs and milk, and divide between the cups. Sprinkle each cup with cheese. Bake for 18-20 minutes or until eggs are set.
Note: I used the Grands biscuits for these and they were WAY too big. There wasn't much filling in each cup:) They were still good, but I will definitely use regular biscuits next time.

Quick and Easy Cereal Bars
1 bag mini marshmallows
1/4 cup butter
1/2 cup peanut butter
4 cups cheerios
3 cups rice krispies (or omit rice krispies and and add 2 more cups of cheerios)
1 cup m&m's (best if frozen when added)
In a saucepan or microwaveble bowl, bring the marshmallows and butter to a boil. Add peanut butter, stir well, and heat for one more minute. Add the cereal to the melted mixture and stir well. Add m&m's and stir gently. (If they are not frozen, they will begin to melt quickly!) Press into greased 9X13 pan. Let it cool and serve (we cooled ours in the fridge so we could serve it quickly to the kids.)

No Bake Cookies - to the Next Level!
Bring to boil in a saucepan for 1 minute:
2 cups sugar
1 stick butter
4 Tbsp cocoa
1 cup milk
Then add in:
1 cup peanut butter
1 tsp vanilla
Mix well and stir in:
3 cups oatmeal
2 1/2 cups mini marshmallows
1 cup chopped peanuts
1 cup chocolate chips (I used semi-sweet)
Scoop with a cookie scoop (I used a medium scoop) onto waxed paper until cooled.
My 5-yr old, who does not like peanut butter, loved these. They are REALLY good!

I'm Back!
Tonight I made this DELICIOUS chicken. My 5-year old ate two pieces. He wanted a third, but I told him he needed to eat his green beans and convinced him to save the 3rd piece for lunch tomorrow. I had to leave the cheese off of his. He doesn't like it. He doesn't know what he's missing.
I use the seasoning for this chicken all the time. It's a rotisserie knock-off seasoning I adapted from the crockpot365 blog. (Great blog, by the way - lots of ideas.)
