I'm Back!

Hello! {{Big wave}}. Ok, so it's almost a year later, but I am finally back to a new kind of normal. It was a little rougher than I thought having a second little one running around, but with the help of emealz, we made it through!

Tonight I made this DELICIOUS chicken. My 5-year old ate two pieces. He wanted a third, but I told him he needed to eat his green beans and convinced him to save the 3rd piece for lunch tomorrow. I had to leave the cheese off of his. He doesn't like it. He doesn't know what he's missing.

I use the seasoning for this chicken all the time. It's a rotisserie knock-off seasoning I adapted from the crockpot365 blog. (Great blog, by the way - lots of ideas.)


Rotisserie seasoning:
1 tsp smoked paprika
1 tsp onion powder
1/2 tsp dried thyme
1 tsp italian seasoning
1/4 tsp cayenne pepper (I dropped this down to 1/8 tsp tonight, adds just a little bit of spicy)
1/2 tsp black pepper
Next time I make this, I will probably add some garlic powder as well.
Rub chicken with olive oil, then sprinkle with seasoning and rub it in. Grill until cooked through and then top with sliced Monterey Jack cheese until melted.
This is a super simple entree that is PACKED with flavor. We had buttered rice and green beans with it.
